“The now-iconic square patty—which debuted in 1921 at the first White Castle in Wichita, Kansas—was the first burger to spawn a fast food-empire: by 1930, White Castle had 10 U.S. locations. But more importantly, the restaurant’s emphasis on cleanliness—facilities were white and customers could watch their burger meat being ground through a window—helped quell fears that all ground beef was as unsanitary as the stuff depicted in Upton Sinclair’s best-selling The Jungle, which was released in 1906. Its success paved the way for the great American burger obsession.”

Food writer Mark Bittman is pitted against Lady Gaga over at Time Magazine. No it’s not about her meat dress. They’re both finalists in the Time Top 100 Poll.
The online poll aims to determine the 100 most influential people of 2011. Every home cook in the known universe has a spattered copy of Bittman’s How to Cook Everything, and if that’s not influential, we don’t know what is.

Professional golfer Tiger Woods has been named 2009 Man of Year.
Okay, we say “Person of the Year” these days, but Mr. Woods has made a man-sized dent in the news lately.
And the title was not bestowed by Time Magazine but by New York Times columnist Frank Rich, who observes:
We keep being fooled by leaders in all sectors of American life, over and over. A decade that began with the “reality” television craze exemplified by “American Idol” and “Survivor” — both blissfully devoid of any reality whatsoever — spiraled into a wholesale flight from truth.
Read it. Mr. Rich makes a persuasive case for the golfer. Time‘s editorial rationale for their choice, Federal Reserve Chairman Ben Bernanke, is as weak as the economy he is alleged to have saved.
